To mine adamantite ore you need mining skill 325, before that you should not even set out.
The best area to farm this ore is Nagrand. The little squiggles on the map are caves that you should visit, as they usually hold ore deposits.

Netherstorm is also not a bad area to farm adamantite ore. There are two caves here as well, which should not be ignored, as they contain one or two ore deposits.
